The Rocoto

The Rocoto, is daily used in the Peruvian kitchen: it is a variety of hot pepper which can be yellow, red, orange or red and has the particularity of being cultivated at more than 1600 meters of altitude in the Andes. One of the traditional dishes of Arequipa is the "Rocoto relleno" (stuffed Rocoto with meat and vegetables).
